Ingin kembali makan sehat minggu ini? Perbanyak konsumsi sayuran bisa menjadi solusi sehat yang murah. Termasuk menyantap sayuran yang satu ini. Hampir selalu hadir di setiap makanan Jepang. Rasanya segar dan renyah serta bernutrisi. Oishii no moyashi!

Kalau sering menyantap makanan Jepang, tentu Anda tak asing dengan sayuran yang satu ini. Disebut moyashi yang artinya ‘kecambah’ alias tauge. Sekilas tampilannya sama dengan tauge biasa. Hanya saja bentuknya lebih besar.

Tauge Jepang ini banyak dijual di pasar swalayan besar. Juga banyak dipakai dalam masakan Korea. Karena dibuat dari jenis kedelai besar maka kecambahnya menjadi gendut dan renyah. Umumnya, yang dijual di pasar swalayan sudah dibuang akarnya sehingga sudah bersih dan siap olah.

Selain ditumis dengan kucai dan sayuran lain, moyashi banyak dipakai untuk campuran ramen, sandwich, salad, atau untuk topping dan pelengkap teppanyaki atau sukiyaki. Rasanya renyah, juicy dan segar.

Seperti jenis sayuran kecambah lainnya, tauge ini juga lebih steril dan mnrupakan sumber protein yang baik. Kaya akan vitamin B1, B2, C, kalsium dan zat besi. Karena itu sebaiknya diolah dengan suhu tinggi dan waktu singkat. Jangan sampai lonyot atau menjadi terlalu lembek karena vitaminnya mudah hilang.

Saat membeli, pilih moyashi yang batang kecambahnya putih bersih dan biji kecambahnya masih kuning terang. Ini sebagai tanda moyashi masih baru dan segar. Jika tak habis dimasak, simpan dalam lemari es. Moyashi tahan disimpan hingga 2 hari. Usahakan tidak terkena air. Jika terkena air, moyashi mudah lembek atau rusak dan berbau tajam. detik
